I didn't install any as far as I remember... This install is an updated Sonoma hackintosh. But I'm pretty sure I didsn't install any kext in L/E as we use to do years ago.

You can boot using -v and then attach the logs. Before that you should do what's instructed above.
 
Remove watchdog=0. Restart and boot into Recovery mode. Scan all the disks and partitions, including child ones. Reboot and you should be good to go.

The SOS passed on all drives/childs with no errors except my external Linux SSD, but I guess it is normal.

Ahhhhh OK... I thought there way to have bootup and shutdown logs somewhere recorded on the HD...

You can use OpenCore Configurator to generate log. But you'll have to configure several things in order to do that.
