macOS boot entry disappeared after trying to re-partition through Disk Utility

If you do not have the clear idea, provide a screenshot for the above steps to assist.
I'm assuming you meant 840 and not 860: this is what I should do?

Doesn't seem to have resized my macOS partition.
As it is not. You can clearly see that a container disk5 has a partition with the name Untitled. You must delete that partition.

Sometimes, it is not possible to delete a volume from a container. In such case, format the volume as a different File System than APFS and then delete the partition.

You should be able to erase the volume. Click on Erase button and the disk should be erased. Once erased, provide a screenshot.

It is "erased", but in the sense that it's formatted again, not actually deleted (and my macOS partition is still the same).

That was the goal!

Select Samsung SSD 840 EVO 250GB Media and click on Partition button and provide a screenshot.
