is there any way to install macOS Catalina in HFS+ format? Like High Sierra avoid 'apfs'
Or some solution for trim on ssd not apple oem?

Firstly, i would like to know why do you want to use HFS+ in Catalina?

Yes, it's available. But that means HFS+ ;)

I would like (if possible) to install the system (10.15) on 'Mac OS Extended (Journaled)' filesystem format, 'natively', without having to make a carbon copy or anything like that

When at Disk Utility, you can select Mac OS Extended (Journaled) instead of APFS. That should work.

this does not work, it forces the creation of the partition in APFS.
