Is it possible to have a medium-power hackintosh with these mini PCs?

Possible, but AMD with APUs don't make a good combination. Go with Intel and you're limited with 10th Gen (IGPU is unsupported on latter versions).

Thank you for your answer. I wanted a product that works with AMD hardware because I have a limited budget. Should I test an Intel mini-pc at this point?

I also have an old Intel pc on which I have W11e Manjaro that I currently use for work.

Specs:
- Intel Core i5 2500 (Sandy Bridge)
- Asus H61M-A/USB3
- Zotac Nvidia GeForce GTX 1050Ti (which I could replace in case)
- x2 Kingston 1Tb ssd
- x1 1Tb Seagate HDD

Could it work?

Yes, it can work. But i'm not sure what kind of work you want to do on your PC. SB would be really old. You can grab some old parts from eBay for a decent price and build the PC or can grab a Tiny PC under 10th Gen with IGPU support and it would fit in that budget.
