I customized it according to my hardware the best I know with my limited knowledge.
When I try to boot up, it shows me this.

Please use the NootedRed.kext from the Downloads and then check.

Tryed is same OpenCL is crashing Metal is very slow, in big sur is not been much used in Ui is not big deal for normal use.It seems is something with my laptop.I will test on another laptop 4700U and 5800u when i have some free time with same method i used for this one to see is it somthing specific to my laptop or not.

Since I am on windows, I'm unable to use that particular tool. But, I used OC Auxiliary Tools to configure my config.plist

There is a mismatch. Make sure you're using the latest OpenCore sample.plist and updated OCAT.

Successfully installed MacOS Big Sur on the system:

• Motherboard: ASUS TUF 520M PLUS WIFI
• Processor: AMD Ryzen 5 5600g
• RAM: Kingston Fury Beast 2x8gb

However, I encountered a very interesting issue. When I set the XMP profile for the RAM in the BIOS, I experience a situation like the one shown in the screenshot when the operating system loads. It seems like there is a drop in image quality or something similar.
The issue is resolved by disabling the XMP profile.

Quite weird. Provide your EFI to check.

Thank you for the response. Please keep my EFI folder.
An interesting fact, I had no issues with Big Sur booting up, when I just tried to install Ventura, instalation stuck at EB|LOG:EXITBS:START.
