I want to play around with Sequoia, but whatever I try, I'm keep getting a black screen after the opencore picker and therefore I can't get to the installation screen.

Hardware:
Intel Core i7 9700K (Coffee Lake)
Gigabyte Z390 Designare
Corsair Vengeance LPX 32GB DDR4
RX 6800 XT
Crucial MX500, 1TB SSD

Can anyone check my attached config?

I did everything in the post you mentioned and more, as far as I can see. I can't get it to work.

Can you advise based on the EFI I've attached?

Set ResizeAppleGpuBars to -1.
Remove all DeviceProperties.
Remove igfxfw=2
Add -wegbeta

Make sure you have the latest OC and kexts. Try DP/HDMI from your AMD GPU.

Thanks for this. I added the arguments, but I think the problem is that it doesn't detect the DisplayPort connection to my screen (AMD GPU = RX6800XT). I've now connected it to one of the HDMI ports on my RX6800XT and now I have vision... (it's installing at the moment...).

I will try to connect via DisplayPort after the installation, let's see if it does work then.

It works fine now. During the installation of Sequoia I needed to connect via HDMI. But now DP works great.

Sounds good!
