You can run High Sierra without any issues. However, there's experimental support for NVIDIA GPUs on macOS Big Sur and Monterey
Just how "experimental" is it? Could I do video editing or graphic design with no issues? If possible I would like to install Monterey. I dont have my GPU yet, but I will get it in about 2 days. Could I go ahead and install monterey and be able to use my 1080ti without reinstalling anything once I do get it?

Yes, that's only running OpenGL and metal is disabled. In short, you can use it for display but not for any other work.

You have two solutions. Either use IGPU or buy a supported GPU.
