Which macOS version should I install?

Ok, thank you.

So, I tried some things :
- checked BIOS several times => seems ok (the HP has EFI function, checked that)
- "reset vram" => 4 times in a row, just to be sure. Everytime.
- tried Catalina, Sonoma and of course Big Sur => nothing worked
- tried to change CPU type a few times => failed
- tried to change Mac model => failed

But for one moment, I got the following picture, then it crashed...gives a clue maybe ?
Did you put an eye in my EFI folder, by luck ? If yes, does it seems correct for you ?

And heh...it's time to tell the truth : I don't have any more ideas what about to do next :(

Except...trying to create a virtual Mac ? And then, be able to use the Mac Hacking tools ?

Omfg. OMFG !!!

Damn me ! The previous screenshot...IT WAS NOT CRASHED !!!!!
After I took the picture, I somehow forgot to shut down the computer => it started to display a bunch of text, just like in your video guide !

Oops...I also forgot that I also tried Monterey XD
Why not giving it a try ? Maybe I'll learn more about MacOS, so let's go guys !!!

But...I put a 500 Gb HDD, and it cannot be mounted. Hmmm...
Does it needs to be GPT mode, because I'm using EFI boot ? Right now, it is MBR.

A different error.

Since Big Sur, SSD is recommended. If you want to try it on HDD, you can. However, as you had Windows installed on it, you either need to create a partition or format the drive completely. In either case, backup your data.

Ok. I went through the whole installation : looks like it took hours ^^
I don't understand how it ended working...

What do you mean by "a different error" ?

However, I have a few issues :
- graphics memory reported : 5 Mb
- HD 4000 detected, but I can't put 1920x1080, it just offers 1280x1024
- no audio : the system has IDT 92HD91BXX
- I don't understand if it's possible to do HDD boot (no Windows on it) instead USB device (I wish I can remove it eventually)

Any advice ? Or should I have a better option => trashbin everything, and do it again with Big Sur ?

HDDs are slow, not for installing OS nowadays.

First you had SMBIOS issue then you had the boot issue. xD

These are normal. You need to work on the postinstallation to fix them!

Of course you can.

Not sure why you used Monterey. But Monterey can work too. Just the Graphics needs to be patched.

As the original issue is solved now, please create a dedicated thread to cover all of your issues in a single place.
