I did two cold boots since making the changes. One just a few seconds after shutting down and a second one 10 minutes after shutting down and.... I finally had no reboot/panic combo...
SMBIOS info are not missing, I remove them out of habit when posting my EFI folder ;)

Yes I reset NVRAM twice after making all BIOS changes and before rebuilding the cache and then shutting down the pc and disconnecting the PSU.
I'm using DP. There are 3 DP and 1 HDMI port and I use the one furthest from the hdmi port; maybe I should try another DP port?

I have just noticed something about Thunderbolt (note that I still have dtgp.aml and SSDT-TB3.aml files in my ACPI folder). Usually it is disabled with default settings so I didn't check after reseting BIOS but now it's enabled but not with the settings I had set previously.

Ok I will not enable TB for the moment and wait for tomorrow as freezes are only happening on cold boots now.
If there are no issues, I will enable XMP bios and adapt other BIOS settings based on the video if they are present in the bios version my MB uses of course.

Yes on a cold boot. It freezes while MacOS is loading, the bar under Apple logo will start loading and it will freezes. I then need to do a hard reboot and MacOS will load and generate the panic file I've attached in my previous post.

I'd like to enable the motherboard's onboard Thunderbolt 3 port (single card with OG firmware) so I downloaded the ASRock Z490ITX/AC aml file and just edited PCI0 to PC00 as the configured port is the good one (RP21 / PXSX) and named the file TB3.aml so that should be ok.

actually sleep is not off topic as before adding the dGPU so only using UHD 630, The system had no freezes and sleep was working properly.
I went through the guide "how to create OC config.plist" and for Comet Lake it mentions that "Sleep/Wake function is broken on Comet Lake...
Hack went to sleep but when trying to wake it with a mouse click it rebooted, so sleep is still bothering and I have disabled it again.
Will now see if the system freezes while under use
